Take It Off In The Rain - Week 4 - A Change In The Menu

It's hard to believe we're closing in on the four week anniversary of our challenge to get healthier, and for those of us who previously packed on unwanted pounds, lose weight in the rain.  The Take It Off In The Rain group has turned out to be so much more than simply a support group.  We're getting to know eachbread other on a deeper level.  We do support successes and act as a buttress for one another when the going gets rough.  We share our stories, our concerns, we share laughs and we swap recipes.

I've been more on the receiving end of tempting creations up to now but I will reciprocate by posting a dish I've been enjoying for quite awhile when I have more time.  For now I wanted to tell you all about a new (to me) flatbread I discovered.  Always searching for some new things to introduce into the same old, same old, I found Arnold Artisan Ovens savory herb with rosemary and basil flatbread on the supermarket shelf.  One sniff told me it was worth trying and WOW, I'm in love.  At first I wondered at its 140 calorie per piece count, but reasoned I could use half, or a whole one as a wrap or panini.  The equivalent in volume to two slices of bread, that made it similar to the low calorie, thin sliced breads.

I came home from my open house in South Bellmore today very hungry.  Not wanting to squander my food allowance (nothing formal, just a good sense plan) on garbage, which would have been my old way, I decided to make an open sandwich of low fat, low sodium turkey (2 very thin slices), low sodium ham (2 thin slices) and low fat, low sodium american cheese (2 thin slices).  Instead of the usual low fat mayo I would have used, I went for dijon mustard as a condiment (thanks to Dr. Oz, who said you could save 100 calories a day by making the change).  I loved it, salivating, tantalizing, rapturous love.  It definitely turned ordinary into extraordinary. Mmmmmmm.  You can bet it will be on the menu till I get sick to death of it.

Hope today goes much better for you Geri...............I agree, it just takes that one right buyer............maybe today.  I am meeting friends for brunch later this morning.......kind of a low key day for me..............even better it was a potential buyer who mentioned how welcoming the rooms were.

Geri--I am encouraged.  If you found the bread in New York and Elyse found it in Florida, I should be able to find in in between (sort of) in Indiana!!  The Earl of Sandwich has always been my hero!  Can't wait to try another version!!
