To the Portuguese, kale is not just a garnish. Grandma's Portuguese Kale Soup is something Bob and I love to have at least every other week during our cold California winters. :)

Although I don't usually post recipes on our real estate blog (actually, this is the first one!) I wanted to share Grandma's Portuguese Kale Soup because not only is it yummy-licious, but it's also very easy and inexpensive to make!

Thanks to Bob's aunt who shared this simple, authentic Portuguese recipe to me from Bob's grandma. She passed away at the age of 97...and we think of her with every bowl of soup. :)

Here is a list of ingredients:

  • 1 lb. beef stew meat
  • 2 cups dried navy beans
  • 3-4 Yukon Gold potatoes
  • 1 Silva "Linguica" portuguese sausage
  • 2 heads of kale

If you like the soup called "Zuppa Toscana" served at the Olive Garden, you'll LOVE Grandma's Portuguese Kale Soup!

HERE ARE MY SIMPLE, STEP-BY-STEP "COOKING FOR DUMMIES" INSTRUCTIONS WITH PHOTOS

 

Brown the beef stew meat at medium heat in a large pot.

Add 12 cups of water; bring to a boil at high heat.

Rinse two cups of dried navy beans.
2 cups of dried navy beans

Add the navy beans to the pot and bring to a boil.

Cover the pot and let the navy beans cook.

Rinse and scrub the potatoes, then slice them.
Sliced Yukon Gold potatoes

Add the potatoes and let simmer until done, then add water.
Let the potatoes cook.

Slice one portuguese sausage horizontally, then vertically.

Add the portuguese sausage to the pot.

In case you aren't familiar with kale, this is what it looks like:
One head of kale

Tear the leafy parts off the stem and rinse in a colander.
Rinse the kale in a colander

Add the kale to the pot and stir well.
Add kale to the pot

Finish adding all the kale into the pot and stir well.
Grandma's Portuguese Kale Soup

Cover and simmer until the kale is dark green. Add salt to taste.

Serve with warm, crusty bread for an authentic Portuguese meal.

Hi Leilani. I am part Portuguese too and love Portuguese food. Your husband's aunt's recipe seems so much easier than the one that I make. I will give it a try. Looks  good especially with these cold nights. In Tampa Bay it's been about 35 °F degrees LOL

Myrl, I've never cooked with kale before either...it was simply a garnish to me! Kale somehow makes the soup so delicious, it doesn't even need any herbs or spices. Just a little salt! :)

Suzanne, I've tried with Silva's "Spicy" Portuguese Sausage before and it was DELICIOUS! Unfortunately, I only found the "Regular" version at the store this time...and we don't live in San Jose anymore (where Silva's Sausage Company is located). :)

This is very similar to an Italian dish I make...I can't begin to spell it...but with a few variations. Escarole lettuce instead of kale and meatballs instead of sausage. Kale is sooooo good for you, I'm going to try this while the weather is still cool. Thanks!
