2 Ways to prepare KALE - My New Favorite Green Leaf!

Kale is an amazing vegetable often called the "Queen of Greens". I happen to agree with that title and with several friends watching their diets, either for weight loss or for the betterment of their health, I wanted to share 2 simple ways to prepare and enjoy this flavorful and nutritious food to show them my support.

Kale Salad

What you need:

·         2 Bunches of Kale, washed - ripped leafy part from vein in big pieces

·         ¼ Cup of Olive Oil

·         2 Teaspoons of Salt

·         3 Cloves of Garlic, crushed

·         ¼ cup of nutritional Yeast

·         1 Teaspoon of lemon juice of Apple Cider Vinegar

·         Gloves (to massage the leaf pieces)

What do you do:

Place all ingredients in a blender (except the kale) and process until smooth then pour it over the kale. Massage the leaves for a few minutes and allow to marinate for at least 15 minutes before servicing. Refrigerate if not consumed, will last 2-4 days.

Kale Chips

What you need:

·         Food Dehydrator.

What do you do:

After following the recipe above, place the kale on a teflex-lined dehydrator sheets and dehydrate until dry (6 to 8 hours). Set the dehydrator temperature for no higher than 105 degrees (still considered raw). The chips are best stored in an airtight container in the refrigerator and will last 2-4 weeks.

These dishes are raw, vegan, and extremely nutritious!

KALE is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese.

Hi Patti, I love Kale and always want to make great salads-but it is very leathery.  Do you take out the vein? Is there a way to chop it so that does not have such a leathery texture?

I love collard greens, but only had a kale salad once. Thank you for the recipe... maybe I'll try kale again.

I'll pass this one to Ceil; anything green should be good. I like baby spinach leaves so I should like this with the olive oil dressing.

Have a great day tomorrow.

Joanna,  I updated the post because of your great question. I do take out the vein, I rip the leafy part from the vein - once you pour the dressing on the leaf pieces, massage it all for a few minutes with your hands. This makes the leafs very soft. Gloves needed not only for hygiene but because you don't want to your hands to smell like garlic for a week!

Margo - I hope you do,  you will discover how yummy it is to eat well!

Christopher - and it is so good for you!!

Carl - the dressing is so flavorful - I hope Ceil makes it for you, let me know how you like.

Howdy and evening Patty

Patty my friend, Kale is mighty tasty! My lady even adds it in her Spaghetti sauce. We have as a side dish a lot of times.

Have a good one

Patty, I’ve put kale in a few green drinks.  This started over a year ago and I lost 13 pounds.  I put the entire kale in the drink not just the leaves.  I swear it tasted like dirt.  I am going to give this recipe a try.  I’m thinking if I stay away from the vein … it will be very tasty.  Just the word vein says … don’t eat it. (LOL).  Thanks for sharing the recipe.

Patty,  I'm confused by your comment in #5 (Gloves needed only only for hygiene but because you don't want to your hands to smell like garlic for a week!)  The cloves are put in the blender with everything else ...right?  I don't get the hygiene part ... I get not smelling like garlic.

Lou, it is both healthy and delicious!

Dale, what a coincidence! I added Kale to my pasta today!

Kathleen, juicing is SOO good for the body. I am not surprised you lost 13 lbs. I am sure you look and feel great.

You got to massage the kale once you put the dressing on it - that's why you need gloves!

Patty,

I had no idea Kale needed a spa treatment prior to eating.  Now I have learned something new, and I will try some kale next time from our Farmers' Market. A

R & A - Hilarious - thanks for the laugh.

On a practical matter, if you massage the kale it loses its toughness and it makes for flavorful.

Sounds yummy, Patty.   Have to try this especially the kale chips.  Have to drag out the dehydrator or can I do it in the oven?  What temp if I do the oven?
