Mixed Greens - Southern Style!

You think of mixed greens  and a mix of fresh salad greens comes to mind, right? Not so when you live in the South!  Here, any leafy vegetables that are cooked are referred to as "greens".  

These mixed greens happened to be mustard and collards.  They have a rich taste and go well with pork and cornbread.

My mother-in-law used to cook collards, kale, mustard, and turnip greens.  A combination of two or three various greens then makes "mixed greens".  There's always a piece of ham hock or other smoked meat cooked with the greens.  

My mother-in-law also used her "special seasoning" - bacon drippings, something I didn't realize she put into the pot until much later when I was already hooked on her greens!

Yum! I love greens. I am a southern girl and green is high on my list.  In fact, I just might cook some today to go with that left over bbq!

Hi Silvia, you are making me hungry! I always think of salad first when I hear "mixed greens".. my favorite leafy green vegetable is spinach though. Of course if you had told me that 20 years ago ... :-)

Hi Andrea, if you were served Spinach the way I was as a kid - a mushy green substance without texture - then I don't blame you, I don't like it that way neither! But I do enjoy it in salads or on pizza! :-)

Tony, old Southern cooking.. you gotta try it some time!

Connie, you are right, a little cold weather on the greens makes them sweeter and better.  I sometimes put mine into the freezer for just a few minutes after I have cut and washed them.
