Like a pro creamed spinach

I love creamed spinach but could never duplicate the restaurant like taste until I ran across this recipe. 

2 10oz packages frozen chopped spinach, thawed 

10 oz bottled Alfredo Sauce 

6 oz cream cheese softened 

½ cup chopped onions 

1 tablespoon melted butter 

2 eggs 

Pinch cayenne pepper 

Salt and pepper to taste 

French Fried Onions for garnish 

Place thawed spinach in a colander and press to extract as much liquid as possible.  Wrap in paper towel and squeeze to remove as much moisture as possible; otherwise dish will be too watery.

Place Alfredo sauce and cream cheese in a bowl and beat together to combine.  Add onions, butter, eggs and spinach and mix well

Season with salt and pepper and cayenne.

Preheat oven to 350 and bake for 35 to 40 minutes.

Top with French Fried Onions

Hi Richard... I am noticing a trend here with all these receipes... none of them seem to fall into the category of recipes that I (or anyone) could eat while dieting.  How about something for those of us in waistline reduction mode?  I bet you that even Wolfgang Puck will have some diet items on the menu of his new Dallas restaurant.

Thanks for your comments, and bringing the diet thing to my attention.

So here is one for you.  1/2 cup lettuce, and 3 baby carrots.  Enjoy.

If you think Wolfgang will have anythin low cal on the menu, forget it.

Dear Steve,

Try one package chopped frzn spinach, two pats butter or margarine to saute two sliced/diced shallots and add the spinach. Once cooked add four tablespoons (or so) Neufaschel cream cheese. It is lighter than regular cream cheese and it does not taste like caulk like the low fat or no fat cream cheese. If you like spicy dishes add one diced and de-seeded Jalapeno pepper. This is less fattening, but still has a rich feel. This goes great with steak, pork or chicken dishes.
